I like breakfast meats. Bacon and sausage are some of my favorite foods. I rarely buy sausage though because they all have tons of crap in them I don’t want in there. Even some of the better brands have added sugar. I try to avoid foods with sugar and funky ingredients. I decided I would try my hands at making some homemade fresh sausage. After doing some looking around t turns out that it’s not very hard to make fresh sausage. Having a meat grinder makes the process even easier. I drove to a few stores looking for ground pork. Finally finding one last package on sale for a buck. So lets get to making some breakfast sausage.
The Ingredients
- 1 TBSP of kosher salt
- 1/2 TBSP of white pepper
- 1/2 TBSP of ginger
- 1/2 TBSP of nutmeg
- 1 TBSP of rubbed sage
- 1/2 TBSP of thyme
- 1/2 TBSP of Cayenne pepper
The Taste
It both does and doesn’t taste like breakfast sausage. I need to tweak the recipe some more but it has a bold flavor. I like that. The sage really comes through and to me sage means sausage. I assume that the flavor I a used to are the crap in there I don’t want. I enjoyed that when cooked this sausage didn’t turn gray. Meat should never be gray. EVER. James I am betting one of the flavors you are missing may be fennel seed which is one of the spices that make breakfast sausage taste like that.You can crush the seed or put in whole. The recipe above is sure simple enough for anyone to follow though and some don’t like fennel but you may want to try a little and see what you think.
In chorizo recipies you use vinegar instad of water to get the flavor of the spices into the meat. Might be worth a try.
No I have not made my own yet, but my friend made some from potbelly pig and it was very good. I’m picking two potbellies up soon and will make sausage out of one and can the other.
